Chestnut trees abound on the top of the hills, above the Caixero olive groves on the lower slopes. Traditionally the chestnuts were harvested for animal feed. With this use now in decline the Caixero team has experimented, creating a chestnut flour - gluten free - which is the basis of this new biscuit range.
